Our Hideaway
The North Peak family of beers are brewed and bottled at a new, secret 5,600-square-foot hideaway on Old Mission Peninsula just outside Traverse City, MI. Ground was broken in fall 2008 on the building and the facility was completed during the spring of 2009. Every nuance and detail of the 51.5 barrel brewing system was driven by brewmaster Mike Hall’s exacting requirements. In fact, this is the only brewery in North America with a carbonator, which provides better head retention and lower dissolved oxygen levels resulting in longer shelf life (up to 1 year of shelf life).
In line with North Peak’s dedication to conservation, the facility employs a Clean-in-Place (CIP) system that filters and reclaims cleaning chemicals so they can be used multiple times. When their useful life runs out, the cleaners are diluted so there is no environmental impact whatsoever. In addition, the brewing facility is lit by compact fluorescent light bulbs (CFLs) to reduce energy consumption and is heavily insulated to contain heat.
